Ingredients

  • 250g dried spaghetti
  • 50g 'Nduja sausage (or spicy chorizo)
  • 100g Italian sausage, casings removed
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 x 400g can chopped tomatoes
  • 1/2 tsp dried chilli flakes
  • 50g fresh basil, roughly chopped
  • Olive oil
  • Salt and freshly ground black pepper to taste
  • Grated Pecorino Romano cheese (optional)

 

Instructions

  1. Cook the spaghetti according to the package directions.
  2. While the pasta is cooking, heat a tablespoon of olive oil in a large pan. Add the 'Nduja and Italian sausage and cook until browned, breaking it up with a spoon.
  3. Add the onion and garlic and cook until softened, about 5 minutes.
  4. Stir in the chopped tomatoes and chilli flakes. Season with salt and pepper. Simmer for 10 minutes.
  5. Drain the pasta and add it to the pan with the sauce. Toss to combine.
  6. Stir in the basil. Serve immediately, topped with grated Pecorino Romano cheese, if desired.
